So I have a garden that I have been helping my grandparents with and right now we are right up to our ears in zucchini. Along with the zucchini we have poblano, bell, cayenne, pepperoncini and jalapeno peppers and all of these things are producing to the max right now. So the other day I was wondering what to eat and I knew I wanted to use garden vegetables but I didn’t know what to make. Then I realized that I had some Italian sausage and I instantly knew what to do.

This recipe is up to interpretation, I’ll give you the jyst and you can run with it and be creative. The main 3 things you need are Zucchini, Italian sausage and spaghetti sauce everything else is mainly a suggestion. Here’s the recipe:


1 Zucchini

1 Italian Sausage

Your favorite marinara sauce (I use the kind from The Silver Palate because there is no added sugar)

1 Poblano Pepper

3 Pepperoncinis canned or fresh

Anything else you wish to add


Start by cutting up your ingredients. Cut the sausage into about 1/2-3/4 inch slices and the zucchini into 1/4 inch slices. Cut the top of the poblano pepper off and scrape out the seeds inside and throw them out. Then cut the poblano in half and half again long-ways. You should now have long pieces of pepper. Now slice each of those pieces into 1/2 inch wide slices. Dice up the pepperoncinis into small squares and remove the tops. Lightly grease a skillet and heat to medium-high (6 or 7) heat. add your sausage to the pan first and cook one side of your sausage to nice and brown. Flip the sausages over and add all of the veggies to the pan. Let simmer and stir with a spatula every minute or so until the zucchini starts to brown. Then add your marinara sauce and cook on low heat an additional 5 minutes.

This dish is so delicious that eating it is bound to bring a smile to your face.
